  • Onions, chopped 300.0 g
  • Garlic, chopped 20.0 g
  • Ginger, finely grated 12.0 g

  • Lamb shoulder, trimmed and cut into 3 cm dice 1.5 kg
  • KNORR Tomato Powder Gluten Free 850g 100.0 g
  • Water, boiling 1.0 l
  • Apricots, dried 150.0 g
  • Chickpeas, drained 400.0 g
  • Couscous, steamed to serve
  • Coriander leaves, to garnish

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. To Cook and Serve

    • Heat olive oil in a large pot over medium heat.
    • Add the onions, garlic, and ginger. Cook until the onions start to soften.
    • Add the cayenne pepper, turmeric, cinnamon, cumin, and coriander.
    • Cook for another 2 minutes, then add the diced lamb.
    • Toss well to coat the lamb in spices. Cook until browned.
    • Add in KNORR Tomato Powder, boiling water and KNORR Beef Booster, stirring to combine.
    • Bring to a simmer, reduce heat, and cover with a lid. Allow to gently simmer over low heat for 3–4 hours, or until lamb is tender.
    • About 30 minutes before the lamb is done, stir in apricots and chickpeas.
    • Garnish with fresh coriander and serve with couscous on the side.
