Manila, capital of the Philippines, is alive with street food culture, and kwek kwek is a comforting favourite of Filipino students and commuters. Our recipe elevates the classic snack with a lime mayonnaise and sweet chilli dipping sauce.

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Eggs

    • Place the eggs in a large pot and cover with water. Bring to the boil then turn off the heat. Cover pot with a lid for 10 minutes, transfer the eggs to a large ice bath for 5 minutes then peel the eggs carefully.
    • In a large bowl, combine flours, baking powder, salt and pepper, water and a few drops of food colouring to make a batter. Whisk to combine.
    • Dredge eggs in extra reserved flour, then into batter, using a skewer to turn them to coat completely with batter, letting excess drip back into the batter.
    • Heat oil in a pot over medium high heat, fry eggs for 1–2 minutes or until batter is crispy. Remove from oil and drain on paper towel. Repeat with remaining eggs, then thread onto skewers, 3 per skewer.
  3. To Serve

    • Combine HELLMANN'S Real Mayonnaise with KNORR Thai Lime Powder in a small bowl. Serve skewers sprinkled with sesame seeds, lime mayonnaise and KNORR Thai Sweet Chilli Sauce.
