Mini Carbonara Quiches
Serve these tasty mini quiches warm or cold. Excellent for freezing, and versatile to use with different fillings. You can omit the bacon and add extra vegetables such as spinach, zucchini, or corn if desired.

Preparation

Pastry Shells
- Cut out short crust pastry sheets into small rounds and line 20 lightly greased tart holes in a mini tart pan.

Pastry Filling
- Fry finely chopped bacon and onion until golden.
- Mix bacon and onion with eggs, cream, HELLMANN’S Real Mayonnaise, thyme, and cheese.

To Assemble & Cook
- Pour filling mixture into tart shells.
- Bake in a preheated combi oven at 175 degree Celsius for 15-20 minutes or until golden and firm.

To Serve
- Cool, then serve with simple salad and a spoonful of chutney if desired.
