The fish tacos are bursting with citrus and finished with tartare sauce and fresh coriander at Taco Medic in Queenstown. Fans of the venue, and its associated food truck, love the offering of handmade tortillas and responsibly-sourced ingredients, such as the catch a local fisherman pulls in daily off the coast of Dunedin.

Meanwhile, Amigos Mexican Grill in both Wanaka and Cromwell offer the surf and turf Camarones tortilla with a filling of fried shrimp and housemade chorizo or, wait for it, the Cerdo y pina, aka pork belly with grilled pineapple. And talking Mexican with a twist, Mexico in Auckland offers a black bean and bacon dip with plantain chips.

Sarah and Oliver Frizzell from The Lucky Taco beefed up their offering in Auckland with a modern take on the flatbread. On their menu you will find thinly sliced beef tongue, braised in bay, cloves, cumin seeds and chilli with spicy avocado cream, pink pickle, red cabbage, lime and coriander. For more of a modern mashup, there is the cheeseburger taco, consisting of marinated ground beef, with pickled jalapeños and melted mild cheddar, spicy avo cream, lime sauce, pink pickle, red cabbage, coriander root and toasted sesame seeds.
