What you need

This recipe provides a vegan alternative to the popular classic eggs Benedict. Firm tofu is marinated in a mild spice mix and combined with a tangy vegan Hollandaise sauce to create something truly unique and delicious.



  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Vegan Hollandaise

    • Place silken tofu, soy milk, vegan butter, and KNORR Thai Lime Powder in a food processor.
    • Blend until smooth. If too thick, add a little warm water and blend again. Season and set aside.
  3. Tofu

    • Mix together olive oil and ground spices, whisking until well combined.
    • Slice firm tofu into 1cm thickness, then use an 8cm round cutter.
    • Pour marinade over tofu rounds, cover, and marinate for 20 minutes.
    • Drain tofu rounds from marinade and lightly dust in flour.
    • Pan fry until golden brown. Drain and keep warm.
  4. Vegetables

    • Sauté mushrooms until golden brown.
    • Sauté baby spinach until softened.
  5. To Serve

    • Toast the English muffins, then arrange on serving plates.
    • Top muffins with sautéed vegetables and a tofu round. Pour over vegan hollandaise to serve.
